Picked using the traditional plucking methods reserved for emperor and a few court dignitaries in which only the bud and first leaf is picked. Baihao Yinzhen is produced in China's home of white tea, Fujian Province in the few weeks between March and April. Having a neatly twisted, needle-like leaf with a very pale, downy green colour it is one of the most exclusive teas you can buy. It creates a smooth, delicate yet distinctive pale cup with the honeyed aroma of well ripened hay. It has a lovely buttery taste with a certain sweetness. Infuse for fifteen to twenty minutes using boiled water that has cooled for a minute.
