A little about: Japanese Green Tea

The first teas grown in Japan were originally from Chinese seed, planted by Buddhist monks in 805 AD. All Japanese teas are green. Tea in Japan is mainly picked using mechanical shears which gives the bushes, planted in long rows the characteristic arched shape. The most expensive teas are still picked by hand. The resultant clippings are placed on a plucking table from which the chosen leaf grade is selected.

Most Japanese teas, which are all green, are steamed for up to one minute. This has the effect of preserving the leaf's rich emerald green colour and gives Japanese teas their uniquely complex vegetal taste.

Gyokuro is the very best Japanese green tea picked in late spring and, like Matcha, is powdered tea from leaves grown in the shade, giving a mild sweetness due to its lower tanin content. Even though other countries such as China and Vietnam produce Matcha, Japanese Matcha remains the best in the world due to the quality of the Tencha leaf used.

Sencha is Japan's most popular tea for general consumption. Genmaicha is a traditional Japanese tea comprising sencha to which toasted rice has been added. Bancha Houghi Cha is another traditional tea that is roasted.
