Bancha has a courser long, wiry stylish leaf, picked near maturity in July. It has a highly acclaimed well rounded cup with a slightly less pronounced flavour than Sencha.
Sencha Fukujyu is one of Japan's most popular teas. It has a mild flavour and is rich in vitamin C. All the other natural compounds present also remain in this extremely healthy tea. In Japan the tea buds begin growing in April and this tea is picked early, whilst other teas are picked nearer maturity in July. Immediately after they are plucked they are steamed, rolled and then fired until they become like green needles. They make a splendid tea with a mixture of subtle sweetness and fresh green scent. Slightly cool the boiled water before making tea with Sencha.
This famous version of Bancha is roasted to give the leaf a distinctively brown appearance and the tea an attractive nutty, slightly sweet tasting flavour.
Kokei Cha is made from powdered Tencha, brilliant green leaves are ground into a powder, mixed with water to form a paste, then pushed through a fine mesh to produce the unique square-edged lengths of tea, then dried. It has a yellowish liquor having a refined 'green' taste. A traditional ceremonial tea, grown in Japan's Shizouka region.
