Ti Kuan Yin, Goddess of Mercy oolong, appeared in a dream to a devout farmer instructing him to look in a cave for a treasure which he should both take good care of and share. On finding a tiny tea sprout, he planted it and in due course produced an unusually fragrant and flavourful tea. This famous, top China oolong from Anxi in southern Fujian province is less oxidised than those oolongs from the north of the province resulting in a more pronounced aroma. Dark grassy green, and loosely rolled, Ti Kuan Yin brews a sweetly fragrant, silky textured cup which goes extremely well with even strongly flavoured foods.
